Chicken or Meat Tacos with Bean Salad
Bean salad (optional): mix together - 1 can drained corn, 1 can drained black beans, 2 tomatoes diced, 1 yellow pepper diced, 1 red pepper diced, 1 TBSP olive oil, black pepper, 1/2 bunch of cilantro
Taco seasoning for chicken or meat (optional – make in advance and store in spice bottle; use as an alternative to taco seasoning mixes that contain yeast): Combine the following - 1 tablespoon chili powder, 1 teaspoon ground cumin, 1 teaspoon black pepper, 1/4 teaspoon garlic powder, 1/4 teaspoon onion powder, 1/4 teaspoon paprika, 1/4 teaspoon crushed red pepper flakes, 1 tablespoon dried herbs – oregano, Italian seasoning and / or whatever you have for dried herbs. Rub taco seasoning on chicken or meat. Grill.
Tortillas (corn or brown rice): Grill about 60 seconds on each side on low heat with soy or rice cheese.
Garnish: Serve on side: – sliced avocado, lime wedges, cilantro.
