Lobster Salad on Papaya

1 tsp lemon juice

1/2 tsp sea salt or Mrs. Dash

1/8 tsp dried mustard

3 TBSP olive oil

handful of fresh herbs diced – such as basil, chives, cilantro or whatever you like

1 pound lobster or shrimp

1 large papaya or 2 small (large – cut into fours like the photo or in half if small papaya, remove the seeds)

1 lime cut into wedges

Mix first 5 ingredients.  Add in lobster or shrimp. Serve in papaya with wedges of lime which bring out the flavor of the papaya and salad.  Serve on a bed of  mixed greens.

Serves 3-4 in 15 minutes or less!
