Bruschetta

Ingredients:
10 Small tomatoes or 4-5 large ones
one large handful of fresh basil
1/2 teaspoon of finely chopped garlic
2 tablespoons olive oil
Salt and Pepper to taste

Preparation:
Combine all ingredients together in a bowl. Mix well and refrigerate for at least 20 minutes before serving.

Serve on gluten free bread or crackers for an easy and elegant appetizer. You can also use it to top chicken, mix into pasta or put in sandwiches. Enjoy!
